Italian Chicken

8 boneless, skinless chicken breast halves
2 Tblsp. oil
1 medium onion, chopped
1 can stewed tomatoes, cut up
1 ½ cups fresh sliced mushrooms
1 large green pepper, sliced
½ cup water
3 tsps. Italian seasoning
1/4 tsp. pepper
3 Tblsp. flour
¼ cup cold water

In a large skillet, brown chicken and onions in oil. Stir in tomatoes, mushrooms, green pepper, ½ cup water, and seasonings. Bring to boil, then cover and simmer 10-15 minutes, until chicken is cooked thru and tender.

Remove chicken and keep warm.
Mix flour into the ¼ cup water until smooth.
Add to pan, stir and cook until tomato mixture thickens.

Serve Chicken and sauce over rice or your favorite pasta.
Sprinkle with shredded mozzarella or parmesan cheese.
