Vidalia Onion Crisp
1 stick, 1/2 cup butter
2 large Vidalia Onions, sliced
1 sleeve (1 packet) Rita Crackers, crushed
1 cup shredded Cheddar cheese
Melt butter in a large skillet, add onions and sauté until soft.
Pour 1/2 of the onions into a 10 X 7 inch casserole dish.
Top with 1/2 the crushed crackers, then 1/2 the cheese.
Repeat the layers.
Bake at 350 degrees for 15 minutes, until cheese is melted.
Cut in squares to serve, serves 8.
* Terri's notes:
~ I think it tastes like onion rings.
~ Definitely better fresh from the oven than reheated, but it's quick to make so making it fresh isn't a chore.
~ Great side dish, especially with anything grilled.
