16 oz. box rigatoni noodles, prepared per package directions
16 oz. container ricotta cheese
2 cloves of minced garlic
1/2 tsp. ground oregano
1 tsp. dried basil
1 24 oz.jar spaghetti sauce
1/4 cup grated Parmesan cheese
2 cups shredded Mozzarella or Italian Blend cheese
Preheat oven to 350 degrees.
Prepare rigatoni noodles, drain.
Gently fold ricotta cheese into hot noodles.
Stir in spaghetti sauce, seasonings, parmesan and 1 cup of mozzarella.
Pour into a 2 qt. casserole dish, greased with a little olive oil.
Sprinkle with another cup of mozzarella.
Bake for 30 minutes, until hot and all cheese is melted.
~ This is a great dish- serve as a side, a meatless meal-or add meat. Take it to a potluck or
share it with a friend in need. You can make it ahead and bake when it's time to serve.
~ I used my favorite spices, use your own or just an Italian blend.
~ Spice it up with some Sweet Italian sausage, cooked and drained, or sauté extra veggies
in olive oil with a little garlic - mushrooms, zucchini, shredded carrot, fresh peppers and
add in before baking?
