Oven Fried Potatoes

2 lbs. potatoes, I like red or gold
1/2 cup chopped onion
2 tsp. Italian herb blend
1/4 tsp. black pepper
1/2 cup fat-free chicken broth
1 Tblsp. soy sauce

Wash potatoes and dice or cube.
Spread potatoes evenly into a 9X13, non-stick baking pan. (cooking spray is optional)
Sprinkle with seasonings.
Mix chicken broth and soy sauce and pour over potatoes.
Bake uncovered at 400 degrees, on the middle rack of the oven.
Stir/toss every 15 minutes until crisp and brown.

~ Wonderful flavor!
~ I wanted to brown them up just a bit more and turned on the broiler for the last 5 minutes, but watch them carefully at this point.
