Rhubarb Meringue Dessert

Mix for crust:
½ cup butter
2 Tblsp. sugar
1 cup flour

Mix together with fork or pastry blender until crumbly and pat into a 9X9 inch pan.
Bake 20 minutes at 350 degrees. Cool.

Mix for filling:
2½ Tblsp. flour
1¼ cups sugar
3 cups rhubarb, chopped
3 egg yolks, beaten

In a heavy bottomed sauce pan, bring sugar and rhubarb to a boil, stirring constantly until thickened. Stir in 1 tsp. vanilla and 1 Tblsp. butter.
Pour over cooled crust.

Meringue:
3 egg whites
5 Tblsp. sugar

Beat egg whites, gradually adding sugar, until stiff peaks form.
Swirl over hot filling and lightly brown under broiler. WATCH IT!

* Note: This doubles very nicely to make a 11 X 15” pan.
