1 tsp. ginger
1 clove garlic, minced
1/3 cup grated onion
2 T. sugar
½ cup soy sauce
1/4 cup water
Marinate 2-3 pounds steak, beef strips, pork ribs or steaks, or chicken breasts.
Pour marinate over meat, cover, refrigerate for at least 2 hours, grill.
1 cup pineapple juice
1/3 cup soy sauce
1/4 cup brown sugar
1 tsp. ginger
Place 4 pounds, lean, beef short ribs in a foil pan, pour marinate over ribs and grill for 2 to 2 1/2 hours. (Or bake at 325 degrees for 2 1/2 hours) Baste ever twenty minutes.
*Great on chicken too!
-Easy recipe: Cut lean, chicken, beef, or pork in cubes. Marinate for two hours in either sauce. Arrange meat chunks on wood skewers (that have been soaked in water-so the won’t burn) and alternate with pineapple chunks, green pepper pieces, cherry tomatoes, mushrooms, zucchini, sweet onion chunks, etc....brush with a little olive oil and grill! It’s a meal on a stick!
-I prefer to marinate things in Tupperware or a good old zip lock bag works great! (Somewhere I heard you shouldn’t use a metal pan, but it may be an old wife's tale?) Pour the sauce over the meat, turn it a few times, cover, turn it once or twice while it’s IN the refrigerator marinating. Don’t leave it out on the kitchen counter.
-A good sauce is a good sauce. If you like it, use it as a marinate to flavor and tenderize your meat; or just pour it over your favorite meat, use your favorite cooking method, and enjoy it. If you really love it, serve the resulting meat and sauce over rice so nothing goes to waste.
