Peanut Butter Popcorn

2/3 cup white popcorn
2 Tblsp. canola oil
1 cup white sugar
½ cup light corn syrup
½ cup honey
1 cup peanut butter
1 tsp. vanilla
Pop popcorn in oil and put in large bowl.
In large, heavy bottomed saucepan, stir the rest of ingredients over medium heat until thoroughly mixed.
Pour over popcorn and stir until popcorn is evenly coated.
Spread popcorn on waxed paper to cool.
Break into chunks and store in airtight container.
Kathy Friesen’s version omits the vanilla and uses all corn syrup, still YUMMY!
