Cracklin' Corn Bread

From the kitchen of Heidi Prahl

Preheat oven to 400 degrees F.

Prepare a heavy 9X9" pan or 8-9" cast iron skillet by melting a good Tblsp. of shortening in it and putting it in the oven to get hot.

Mix and beat well:
1 1/4 cups flour
3/4 cup corn meal
1/4 cup sugar
2 tsp. baking powder
1 cup milk
1/4 cup vegetable oil
1 egg
½ tsp. oil

Pour mixture into HOT pan and bake for 20-25 minutes.
Take it out of the oven, cut it immediately and drizzle with honey.
