Baked Oatmeal

from the kitchen of Becky Riggs

1 1/3 cup quick or old fashioned oatmeal
1 cup raisins (or frozen blueberries or other dried fruit here)
1 cup skim milk
½ to 1 cup sugar, brown sugar, brown sugar twin, or splenda
1 tblsp. melted butter
1 tsp. cinnamon
1/8 tsp. salt
1 chopped apple... peel on is ok
1/4 cup (or more) chopped walnuts
optional 1 tsp. maple flavoring, if not using brown sugar

preheat oven to 350 degrees.
mix everything together in a greased 1 quart casserole.
bake uncovered for around 30 minutes or until milk is absorbed.
serve with milk. makes 3-4 servings.

- Hearty, healthy, great start for cold winter mornings!
- Do add dried fruit and nuts before or after baking, add cinnamon, nutmeg, or top with fresh fruit, chopped nuts, and coconut.
- Can easily be refrigerated and reheated.
