Swedish Green Potatoes

6 large potatoes
3/4 cup sour cream
1 stick butter
1 tsp. sugar
½ tsp. salt or to taste
¼ tsp. pepper
2 Tblsp. chopped chives
2 tsp. dill weed
1 pkg. frozen spinach, thawed and chopped, cooked and well drained

Cook potatoes and mash with sour cream, butter and seasonings. Beat until fluffy.

Stir in spinach (or a couple cups cut up, cooked broccoli)

Serve at once ~ Or put in a buttered baking dish, sprinkle with 1 cup shredded American or cheddar cheese, and bake at 400 degrees for about 20 minutes, until heated through and all cheese is melted.

Can be made a day ahead, will need to be baked 30-40 minutes to heat through.
