Blueberry Cobbler

Fruit
4 cups of fresh or frozen blueberries
½ cup sugar (depends on how sweet the berries are)
2 Tblsp. flour
¼ cup water
1 Tblsp. butter

Melt butter in 2 quart baking dish. Add fruit, stir in sugar, flour and water. Microwave on high for about 3 minutes (stir half way through). You can do
this stove top too, but why waste a dish? Cook just until juices are beginning
to heat through, flour and sugar are dissolved and evenly distributed. We don’t want to cook the fruit, but give it a head start so we can bake cobbler at a higher temp/shorted time and enjoy it sooner!

Topping
1½ cups flour
½ cup sugar
3 tsp. baking powder
½ tsp. salt
5 Tblsp. butter
3/4 cup milk

Mix dry ingredients. Cut in butter into dry mix until crumbly.
Add milk and stir just until moistened.
Drop evenly in spoonfuls over berries.
Sprinkle with sugar, and a little cinnamon if desired.
Bake at 425º for about 25 minutes. Topping will be golden brown.
Serve warm with ice cream!

Terri’s notes:
~ Have more time and don’t want to mess with pre-heating the berries? Just stir flour, sugar and water into berries and dot with butter. Add topping and bake at 350 degrees for about 45 minutes, until top is golden and passes toothpick test.
