Laurie's Incredible Enchilada

Family-friendly food from Terri

1 Tblsp. oil
2 Tblsp. chopped onion
1 Tblsp. diced green pepper
1 lb. ground beef or turkey
1 pkg. taco seasoning mix
1 cup water
2 cups taco sauce or salsa, divided
1 small can sliced black olives
½ cup butter
¼ cup flour
1 tsp. salt
1 cup milk
12 (6 inch) tortillas
1½ cups shredded Cheddar cheese
1 cup sour cream

Saute onion and green pepper in oil.
Add beef, brown. Drain.
Stir in taco seasoning, water and ½ cup taco sauce.
Heat to boiling and simmer, uncovered for 10 minutes.
In another saucepan, melt butter. Stir in flour and salt.
Add milk and 1 cup taco sauce. Heat to boiling and stir 1 minute.
Warm tortillas.
Spread remaining ½ cup taco sauce on the bottom 9X13 pan.
Fill tortillas with beef mixture, roll and place seam down in pan.
Spread with cream sauce. Sprinkle with cheese.
Bake uncovered for 20 minutes at 350 degrees.
Dot with olives and sour cream before serving.
