2 pounds of left over beef roast, shredded
2 cups of water
1 package of Lipton onion soup mix
3 cans of tomato paste
4 cups of rice, cooked to package directions
1 package of frozen, mixed veggies
1 pound of shredded cheese, your choice
The meat was already cooked, so I put meat in a sauce pan, added water, tomato paste, onion soup mix and the mixed veggies. Heated that just until warm and mixed.
I used some garlic seasoning mix, a dash of chili powder, and a small amount of salt for seasoning. You could add whatever you like for seasoning, our family likes a strong garlic flavor.
In a 9X13 pan, layer ½ the rice, meat mixture, and some cheese, then rice, meat mixture and topped again with cheese. Baked at 350 degrees for 35 minutes. Served with a lettuce salad.
*Terri's notes: Always try to cook for two meals at once! Change meat to chicken - Bake two, one for dinner tonight and shred one for this casserole. Change rice to noodles, tomato paste to Chicken soup, have fun! Try ham, broccoli and macaroni. Meat, rice or noodles, sauce and seasoning (Taco seasoning or salsa, Italian.) can make a thousand combinations - and the cheese on top is just everyone's favorite, crowning touch.
