Baked Tomatoes

4 medium, ripe tomatoes
full 1/4 cup grated Parmesan cheese
full 1/4 cup finely shredded Mozzarella cheese
1/2 cup Italian seasoned or Panko bread crumbs
2 Tblsp. olive oil

In a small bowl, mix cheeses and bread crumbs.
Drizzle in oil, tossing and adding just enough oil to moisten mixture.

If using the Panko crumbs, you might add a dash of salt and a sprinkle of garlic, oregano or basil.

Core tomatoes and slice a thin slice off of the top and bottom of each one.
Cut tomatoes in half, you'll have 2 thick slices from each tomato.

Spread a bit of olive oil in a shallow baking dish.

Arrange slices close together in prepared baking dish.
Top each slice with the crumb mixture.

Bake for 20 minutes at 400 degrees, or until cheese is lightly browned and tomatoes are tender.
