1/2 fresh, ripe pineapple, diced
juice of 1 lime
1 clove garlic, minced
1 green onion, thinly sliced
1/2 red bell pepper, diced
1/2-1 fresh green or red chili pepper, seeded, finely chopped
3 Tblsp. cilantro, torn in pieces
3 Tblsp. fresh mint leaves, torn in pieces
shake of salt
pinch of sugar
In a glass bowl, toss together pineapple with juice and all the other ingredients.
Cover and chill before serving.
Serve with chips or this is a fabulous compliment to grilled or spicy meats.
