Campfire Chicken Kabobs

A family favorite from Terri’s kitchen

1 package wood skewers or metal skewers

1.5 lbs. boneless, skinless, chicken breasts, cut in 1½ inch cubes
1 20oz. can of pineapple chunks in juice
1/4 cup soy sauce
1/4 cup olive oil
2 Tblsp. brown sugar
1/2 tsp. garlic powder or 2 cloves of garlic, crushed
1 tsp. ground ginger

1 green pepper
1 red pepper
1 sweet onion
1 small zucchini
fresh mushrooms
cherry tomatoes

Before you leave home: in a small container, mix soy sauce, oil, sugar, garlic and ginger.

On-site: immerse wood skewers in water to soak so they won’t burn on the grill.
Cube chicken and put into a large bowl.
Add pineapple with juice and the other marinade ingredients that you mixed up at home.
Toss with chicken so it can marinade while you prep veggies.

Wash veggies. Cut peppers and onions in squares, leave mushrooms whole or cut in half, slice zucchini, tomatoes need no prep at all. Add veggies to bowl and toss until all are well coated.

Now the fun begins! Wash hands and let everyone create their own Kabob-combos.
It’s a great way to start gathering early for family time around the fire.

Grill, turning once or twice until chicken is done and start savoring the memories.
