Cucumber Dip

From the kitchen of Dianne Simpson

1 cucumber – seeds removed, diced (about 1½ cups)
1 bunch of green onions, thinly sliced
8 oz. package cream cheese
2 Tblsp. Miracle Whip
Garlic powder or garlic salt to taste (Terri used one clove of garlic, finely chopped with a pinch of sea salt)

Mix cream cheese, Miracle Whip; add cucumber, green onions and garlic powder/salt.

This was still too chunky for me so I gently used my immersion blender to smooth it out a bit, but left some texture.

Serve with chips, crackers, vegetables. Also great as a sandwich spread, on a bagel loaded with veggies.


Terri's notes: 
~A sprinkle of fresh dill would be perfect for garnish or extra flavor
