1 head of cabbage, shredded
4 apples, unpeeled, finely chopped
2 celery ribs, finely chopped
1½ cup raisins, craisins, or dried cherries
1/3 cup olive oil
4 Tblsp. lemon juice
1 tsp. salt
½ tsp. ground cinnamon (or to taste)
Get out the food processor or your good, old-fashioned grater and shred the cabbage.
Mix together olive oil, lemon juice, salt, cinnamon and set aside.
In a large bowl, toss together cabbage, apples, celery and craisins, raisins or cherries.
Pour dressing mixture over the top and mix in well.
Cover and chill in refrigerator at least a couple hours before serving.
