1 head of cauliflower, washed, chopped
1 cup fat free chicken broth
In a saucepan, let cauliflower simmer in chicken broth until very tender.
Takes about 15 minutes.
Drain the cauliflower and mash as you would potatoes.
Season with pepper.
That’s it! It’s delicious.
~ Sooo easy! It’s low carb, low fat, can be gluten and dairy free.
~ Or, you may add anything you love in mashed potatoes. Mash with butter, olive oil, buttermilk, or sour cream. Season with garlic, chives or add cheddar cheese.
~ Blend in a food processor for extra creamy texture.
~ For a little green and extra veggie power, add some broccoli flowerettes.
~ Not sure the family will buy it? Mix half mashed potatoes with ½ cauliflower.
