Shrimp Scampi

1-1½ pounds shrimp, fresh or frozen

2 Tblsp. lemon juice
¼ cup butter
½ tsp. minced garlic
2 Tblsp. chopped parsley
1 Tblsp. dried oregano
½ cup chicken broth, vegetable broth or white wine

½ cup Panko bread crumbs
2 Tblsp. grated parmesan cheese

Arrange shrimp in a glass baking dish.
In a small saucepan combine the next 6 ingredients and bring to a simmer.
Pour over shrimp.

Sprinkle shrimp, first with cheese, then with bread crumbs.

Bake at 350 degrees for 15 minutes.
Turn on the broiler just long enough to brown crumbs evenly.

Terri’s notes:
~ This is one of mine and a family favorite!
~ Serve with a salad, a lite pasta dish loaded with fresh veggies, or steamed vegetables.
~ Easy and fast to prepare. I always have frozen shrimp on hand, and this is fancy enough for a special dinner or just dinner for special people.
