German Apple Cake 2

From the kitchen of Yaime Vega

1 cup oil
2 cups sugar
2 eggs, beaten
2 cups flour
2 tsp. cinnamon
1 tsp. baking soda
½ tsp. salt
1 tsp. vanilla
4 cups of sliced apples ( 2 Golden Delicious, 2 Cortland, 2 Gala)
½-1 cup chopped nuts, optional (walnuts or pecans)

Mix all ingredients except apples.
Mixture will be stiff, but when it’s all smooth, stir in apple slices.
Spread evenly into a buttered 9X13 baking dish.
Sprinkle with nuts and sugar and cinnamon, if desired. (about a 1/4 cup sugar mixed with 1 tsp. cinnamon)


Bake at 350 degrees for 45 minutes.


Top with whipped cream, cream cheese frosting, or warm caramel sauce.


Caramel Sauce
1/2 c. butter
1/2 c. brown sugar, firmly packed
1/2 c. sugar
1/2 c. whipping cream
1 tsp. vanilla
Combine all ingredients except vanilla in a heavy bottomed saucepan.
Heat to boiling over medium heat, stirring frequently. Boil and stir 1 minute.
Cool slightly. Stir in vanilla. (Sauce can be made ahead of time, covered and stored in refrigerator; just warm before serving.)
