Summer Salsa

Mix together in large bowl

1 Red Pepper - chopped
1 Green Pepper - chopped
1 Medium Onion - chopped

1 can of black-eyed peas - drained
1 can of pinto beans - drained
1 can of shoe peg corn - drained

Mix and bring to boil:
1 cup of vegetable oil
1/2 cup sugar
1/2 cup cider vinegar

Cool slightly and pour over veggies - marinate over night - drain and serve.

Notes:
- Mix the colors of peppers to use what you have, or just to make it pretty! Throw in a purple, yellow or orange one too!
- Feel free to add a chopped tomato.
- Good with chips, and great as a side or topping for grilled meats.
