From the kitchen of WGNV's Kathy Kexel
6 cups puffed brown rice cereal (organic, if you can find it)
¾ cup sliced almonds
- toast almonds and brown rice cereal, cool
1/3 cup coarsely chopped dried cranberries
1/3 cup coarsely chopped dried cherries
1/3 cups coarsely chopped dried blueberries
- one cup of any dried fruit would be nice -- there are so many great combinations available in the chips/nuts aisle
3 Tblsp. light olive oil or Flax seed oil
1 Tblsp. honey
4 cups mini-marshmallows
Mix as if they were “regular” rice crispy bars, press into a 9x13 pan.
