Squash Apple Bake

1 Acorn squash
1 large baking apple, unpeeled, cut in chunks (Cortland or Granny Smith are good)
2 Tblsp. butter
2 Tblsp. brown sugar
chopped walnuts

Preheat oven to 425 degrees.

Spray a jelly roll pan or 13X9 pan with cooking spray.
I also pour a bit of water into the bottom of the pan, just to make clean-up easier.

Cut squash in half. Remove seeds. Bake, cut side down, for 30 minutes.
Remove squash from oven and turn it over.
Fill center of each with ½ of a chopped apple (mixed with sausage if you like)
Dot each with 1 Tblsp. butter.
Sprinkle each with walnuts.
Sprinkle each with 1 Tblsp. brown sugar and a couple shakes of cinnamon.

Bake for 30 minutes more, or until squash and apples are tender.

Terri’s notes:
Sausage is a nice touch and makes this a whole meal. I like sage or maple flavored bulk sausage. Just brown, drain and mix with the raw apple.
