Blueberry Oat Muffins

1¼ cups uncooked oatmeal
1¼ cups flour
1/3 cup sugar
1 tablespoon baking powder
½ teaspoon salt
1 cup milk (or yogurt, or sour cream)
1 egg
¼ cup melted butter or oil
1 cup fresh blueberries or frozen blueberries


1 cup oatmeal
1 cup sour milk (2 Tblsp. vinegar or lemon juice plus milk to make 1 cup)
1 cup flour - may use up to half whole wheat flour
1 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
¾ cup brown sugar
1 egg, beaten
¼ cup melted butter
1 cup blueberries (fresh or frozen)

2 tablespoons sugar
2 teaspoons cinnamon

Preheat oven to 350 degrees. Combine oats and milk, let stand 5-10 minutes. Combine dry ingredients in another bowl. Add egg and butter to oat mixture and stir well. Stir oat mixture into dry ingredients. Fold in blueberries. Fill lined or greased muffin tins each 2/3 full, and sprinkle each with topping and a pinch of oatmeal. Bake for 20 minutes or until done to the touch.  Makes 12.
