Vegetable Barley Salad

Quaker Quick Barley
1 can artichoke hearts, quartered
Fresh broccoli, bite sized pieces
Cucumber, sliced and quartered
Grape tomatoes, cut in ½
1–1½ cups shredded cheese

Cook ½ box of Quick Barley according to package directions – rinse with cool water, drain.

Add any veggies you’d like to mix in. Sandie started with broccoli, cucumbers, and artichoke hearts.

Toss with Greek Vinagette or Cesaer Vinagette salad dressing to taste, about ½ bottle.

Chill several hours or overnight.

Before serving, add tomatoes and cheese, toss again.

Notes:
- Make your favorite Pasta Salad recipe with Barley! It’s a more nutritious alternative to rice or pasta and it’s delicious – an easy trade in every way. GO healthy!
- This a just a beginning, to make you brave. A bite would be better, but you’ll have to take my word for it.
