Prep time: 15 minutes Bake time: 35 minutes
2 T. butter
2 T. flour
1 tsp. salt
1/8 tsp. pepper
1/8 tsp. thyme
½ cup chicken broth
½ cup half & half
2 cups cubed cooked chicken
1 family size bag frozen mixed vegetables
1 pkg. frozen prepared pie crusts (thawed)
Heat oven to 425 degrees.
In large sauce pan (at least 3 quart size) melt butter over low heat. Add flour, salt, pepper, thyme. Stir together with wire wisk. Add chicken broth and half & half and stir well with wire whisk to thick consistency. Set aside.
Add chicken, frozen mixed vegetables (right out of the bag is fine). Combine well to coat Chicken and vegetables with thick sauce.
Pour mixture into:
Prepared pie shell, cover top with 2nd crust, seal sides. Surround with foil collar.
Large casserole dish, cover with 1 crust
Individual small casserole dishes (ramekins), cover each with crust to fit.
Paint pie crust with thin layer of half & half to create sheen.
Bake in preheated oven, 425 degrees approx. 35 minutes "til crust is golden (less time for small dishes, more time for deep, heavy casserole).
Serve with salad (out of the bag of course!)
