Spinach Bacon Deviled Eggs

1 dozen eggs, hard cooked and peeled
1/2 cup frozen chopped spinach, thawed and drained, squeezed dry.
1/4 cup mayo
1/4 cup real bacon bits
2 1/2 tblsp. cider vinegar
1 tblsp. sugar
1 tsp. black pepper
1/4 tsp. salt

Perfect hard boiled eggs: Put eggs in a pot with enough water to cover and bring to a boil. Immediately, cover with a lid, turn off heat and let sit for 20 minutes!

Cool eggs. Peel, cut in half lengthwise, scoop out yolk, and mash yolks with a fork.
Add remaining ingredients and mix well.
Spoon yolk mixture into egg halves.
Chill until ready to serve (should chill 2 hours or overnight to let the flavors blend.)

Notes:
Not feeling that adventurous? My own special recipe calls for salt and pepper, only enough Miracle Whip to moisten the egg yolks, and the “secret ingredient….Western Dressing (shhh!) 1-2 Tblsp. depending on how many eggs you us. Adds wonderful flavor and great color!
