Scalloped Pineapple

2 eggs, beaten
3/4 cup sugar
1/3 cup butter, melted
1/3 cup 1/2 & 1/2
1 20 oz. can pineapple chunks or tidbits, drained
6 slices bread, toasted and cubed

Mix bread chunks and pineapple in buttered casserole dish.
Mix eggs, butter, ½ & ½ and sugar together and pour over bread and pineapple.
Crumble 1/4 cup brown sugar and sprinkle cinnamon over the top.
Bake at 350 degrees for about 45 minutes or until top is golden brown.

Terri's Notes:
-Great side-dish with ham.
-Nice breakfast or brunch side with eggs and sausage or ham.
-Double recipe to make a 13 X 9" pan.
