Hawaiian Chicken Salad

Dressing, mix:
1/3 cup mayo
1/3 cup plain yogurt
4 teaspoons apple juice (or orange)
½ tsp. salt

5 cups cooked chicken breast, cubed or chopped
1/2 cup chopped celery
1/2 cup chopped green onion
1 - 16 ounce can pineapple chunks or tidbits, drained
1 - 8 ounce can sliced water chestnuts, drained
1 cup sliced green pepper
1 cup seedless green grapes
1 cup seedless red grapes
1 cup shredded cheddar cheese

Add dressing, mix and chill for at least 4 hours
Top with 3/4 cup salted cashews.

Great served with crackers or breadsticks
You look like a gourmet if it’s served in a melon or pineapple half!
