2 lbs. broccoli, trimmed and cut into 1-inch florets
1/4 lb. sliced bacon (about 4 slices), cut in pieces
1 crushed garlic clove
1/3 cup raisins, regular or golden
1/4 cup distilled white or rice vinegar, raspberry balsamic was good too.
2 tblsp. olive oil
1/2 tsp. salt
1/4 tsp. black pepper
* Save and use the broccoli stems, peel with a vegetable peeler, cut crosswise into 1/4-inch slices.
Cook bacon until browned and crisp, 4 to 5 minutes.
Drain on paper towels.
Using fat in skillet, sauté garlic and raisins until garlic is pale golden.
Stir in vinegar, oil, salt, and pepper, remove from heat.
Cook broccoli in boiling salted water until just tender, 4 to 5 minutes.
Drain broccoli. Put in a pretty bowl.
Bring dressing to a simmer, stirring, cook 1 minute.
Pour hot dressing over broccoli and sprinkle with bacon, tossing to combine.
-Bacon dressing can be made ahead of time and micro-waved to heat through just before adding to hot broccoli.
-A sprinkle of sliced almonds adds a pretty touch too.
