Pasta Caprese

WITH TOMATOES, BASIL AND MOZZARELLA

12 oz. box Bow tie pasta
8 oz. fresh mozzarella, cubed
4 or 5 tomatoes on the vine, about 1½ lbs.
generous 3/4 cup fresh basil, snipped
Newman’s Own Balsamic Vinaigrette

Prepare pasta according to directions for al dente, rinse, drain and cool.

In a pretty bowl, toss pasta with tomatoes, cheese, basil and dressing.

May serve chilled or room temperature. Tastes even better the next day!

Terri’s notes:
~ I started with a couple glugs of good olive oil and balsamic vinegar I had on hand and then added the Newman’s for the seasoning and kick, but I have also used all Newman’s.

~ Can add some chopped cucumber, artichoke hearts or sliced black olives, makes a bigger bowl!

~ Great with grilled chicken or steak.

For a quick, fresh summer taste treat:
1-2 fresh, vine ripened tomatoes - cubed
8 ounce ball of fresh mozzarella cheese – cubed
a handful of fresh basil, snipped

Splash with Newman’s Own Light Balsamic Vinaigrette or
2-4 Tblsp. extra-virgin olive oil
1-2 Tblsp. balsamic vinegar
salt
black pepper
1 clove of crushed garlic, optional
