Rhubarb Custard Bars

Preheat oven to 350

Mix: Crust
2 cups flour
1/4 cup sugar
1 cup cold butter

Cut butter into flour and sugar, press into 9X13" pan.
Bake for 10 minutes.

Evenly cover crust with 5 cups chopped rhubarb
(Or 4 cups rhubarb and 1 cup strawberries)

Mix: Filling

3 beaten eggs
1 cup whipping cream
7 Tblsp. flour
2 cup sugar
1 tsp. vanilla

Pour over rhubarb
Bake for 40 - 45 minutes

Mix: Topping

2 - 3 oz. packages cream cheese, softened
½ cup sugar
½ tsp. vanilla
1 cup whipping cream, whipped

Beat together cheese, sugar and vanilla and fold in whipped cream
Spread on bars
